This past Sunday I made dinner for my sis Kerrie, her boyfriend Robert & my old friend Minh.
Since I moved back to Houston they have been asking me to make them dinner. They finally got me to do it:)
On the menu...pan seared snapper with a brown butter sauce, oven roasted tomatoes with feta and dill, and sauteed kale with shitakes, fresno peppers, shallots and pine nuts.
I oven roasted the tomatoes with olive oil, salt, pepper at 425 for about 20 min, finished them under the broiler for a couple of minutes to get a little chard skin. I topped them with some french feta and minced fresh dill.
And of course my favorite thing in the world kale.....mmmmmmm. It was a nice combo with the shitakes and the pine nuts.
